Mile High Banana Nut Muffins

This is an OLD recipe of my mom’s that I adapted to high-altitude baking. I generally bake these in a jumbo muffin pan because we can freeze a few and eat a few. Makes 6 Jumbo Muffins!

Mile High Banana Nut Muffins

You can bake this as a loaf or as regular size muffins – but I think they turn out best as Jumbo Muffins

  • Total Time: 40
  • Yield: 6 Jumbo Muffins 1x

Ingredients

Scale
  • 3 VERY ripe bananas
  • 2/3 C Sugar
  • 2 Eggs
  • 2 C Flour
  • 1/2 tsp. Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Salt

Instructions

  • Combine mashed bananas and sugar and beat until fluffy
  • Add eggs and beat again until fluffy
  • Sift in flour, baking soda, baking powder, & salt
  • Stir gently until just a little flour is visible
  • Add in chopped nuts
  • Fold gently
  • Divide batter between 6 jumbo muffin cups
  • Bake at 375 for 22-25 minutes – I check them at 20 minutes and then make adjustments to the time.

Notes

A loaf will likely bake for about 60 minutes – but start checking at 45 min

Regular size muffins iwll likely bake about 18-20 minutes – start checking at 15 minutes.
