This is an OLD recipe of my mom’s that I adapted to high-altitude baking. I generally bake these in a jumbo muffin pan because we can freeze a few and eat a few. Makes 6 Jumbo Muffins!

You can bake this as a loaf or as regular size muffins – but I think they turn out best as Jumbo Muffins

Ingredients

- 3 VERY ripe bananas
- 2/3 C Sugar
- 2 Eggs
- 2 C Flour
- 1/2 tsp. Baking Powder
- 1 tsp Baking Soda
- 1 tsp Salt
Instructions
- Combine mashed bananas and sugar and beat until fluffy
- Add eggs and beat again until fluffy
- Sift in flour, baking soda, baking powder, & salt
- Stir gently until just a little flour is visible
- Add in chopped nuts
- Fold gently
- Divide batter between 6 jumbo muffin cups
- Bake at 375 for 22-25 minutes – I check them at 20 minutes and then make adjustments to the time.
Notes
A loaf will likely bake for about 60 minutes – but start checking at 45 min
Regular size muffins iwll likely bake about 18-20 minutes – start checking at 15 minutes.
